Breakfast Brownies
CHOCOLATE for breakfast! You should have seen my kids’ eyes when I told them that we were making brownies for our first meal of the day. I was equally excited, since I just love the combo of chocolate + coffee. Luckily, this recipe actually nourished us + we didn’t suffer from a 10am sugar crash.
Ingredients:
2 cups coconut milk
1/2 cup maple syrup
1/3 cup peanut butter
1 tsp vanilla
2 cups rolled oats
1/4 cup cacao powder
1 tsp baking powder
1 tbsp flax
pinch of salt
1/3 cup dairy-free chocolate chips
Directions:
Preheat the oven to 350. Add all the wet ingredients, followed by the dry. Mix well + then add the chocolate chips. Pour into your desired baking pan + bake for about 40 minutes (I used a 9X9 pan).
