Energizing Green Juice

I am not a “juicer” but I have fallen deeply in love with this juice recipe + find myself craving it. The thing I love about this recipe is that there are only a handful of ingredients, it tastes so fresh + earthy, + it gives me this kind of level-headed clarity that coffee can’t touch.

I like to enjoy this green juice either first thing in the morning or if I need a little afternoon pick-me-up. And if you don’t have a juicer, don’t worry because neither do I. I use my Vitamix to blend everything up + then filter it through a piece of cheesecloth to get all the juicy goodness out of it. Then I just rinse + re-use the cheesecloth.

This recipe makes one nice glass of juice + it should be consumed within about 15 minutes of making it.

Ingredients:

1/2 organic cucumber (chopped with the peel)

2 organic kale leaves

1 organic apple (chopped with the peel)

4 ounces of water

1/2 lemon juiced

1 tbsp organic cold-pressed organic olive oil

Directions:

Chop your cucumber + apple + place it in your blender with the kale + water. Blend until consistently mixed, then filter through a piece of cheesecloth. Add the lemon juice + olive oil. Enjoy!
