Orange + vanilla overnight oats

When I was postpartum with my third, we LIVED off of overnight oats for many weeks. Not only were they nutritious, comforting, + warm, they were easy to prepare + my oldest was even able to pop them in the microwave while I snuggled baby in bed. And the best thing is that there are bazillions of recipes to try. You can make a big ol' batch on Sunday night for the week + they help you start your day off satisfied + well-fed. Plus, oatmeal has been found to help with breastmilk production!

While our go-to recipe usually is filled with almond milk, almond butter, maple syrup, chia, + hemp seeds, this week we decided to try something new. We still enjoy overnight oats a few times a week because they are just so easy + delish!

Ingredients:
. 1/2 cup rolled gluten-free oats
. 1/2 cup non-dairy milk
. pinch of cinnamon
. pinch of salt
. 1/2 tsp vanilla extract
. 1/2 orange zested
. 2 tbsp pepitas
. 1 tbsp shredded unsweetened coconut
. drizzle of honey

Just mix everything in a jar, cover it with a lid (I found mine in the canning section at Target)+ pop it in the fridge. In the morning, you can top with orange segments + another drizzle of honey if needed. This recipe makes 1 serving, so double or triple for as many as you need. Enjoy!
